This is very similar to the tomato and feta cheese recipe I posted some time ago, but this recipe actually calls for cucumber with some minor tweaks here and there.
1 package cherry tomatoes, halved
1/3-1/2 cup of crumbled or cubed feta cheese
1/4 of sliced red onion
2-3 teaspoon red wine vinegar
1-2 teaspoon olive oil
1 teaspoon fresh or dried minced basil
salt and pepper to taste
RECIPE
Serves 4

- Slice the red onion and place in a bowl.
- Pour in the red wine vinegar and olive oil into the bowl of onions, toss, and let it sit for a few minutes to marinate.
- Slice the tomatoes in half and toss them in with the onions.
- Sprinkle with basil, salt and pepper to taste.
- Drop in the feta cheese and lightly toss.
- Enjoy!
