Growing up, meals like this are home made and served at parties. My Lola, grandmother, would make this all the time and is one of my favorite meals prepared by her.
I am a fan of home cooked meals and that means everything by scratch, but this time, I'll show you how to prepare that home cooked style that's just as close with a simple packet. Home cooked meals essentially take longer time to prepare, so if you're the type to cut corners and need something that is less tedious, then this is the recipe for you.
The packet already has a recipe and instructions written on the back of it, but I will show you how to cut those corners further with my added twist to the recipe. ;)

RECIPE
Serves 4 people.
1 package Super Q noodles or any rice noodle you may prefer
2 packets Mama Sita's palabok mix
4 cups chicken broth or 1 cube chicken bouillon dissolved in 4 cups water
1/2 cup shrimp, peeled
1 egg

Garnishes
1/2 cup chopped chicharon or cracklings.
1 calamansi or lemon cut into wedges
1/2 cup chopped green onions
1/4 cup fried garlic (You can use already-made fried garlic bits)
4 hard boiled eggs, sliced
1/4 cup tinapa *optional* (Tinapa is dried and flaky smoked fish used as a topping.)
1/4 cup bacon *optional* (This is not traditional, but my husband and I love the bacon bits for that added flavor and crunch.)
- Prepare the garnishes and set aside.
- Prepare the noodles. Soak or boil the noodles according to the package.
- Peel the shrimp and cut in half. Set aside.
- Pour the chicken stock into a medium sized pot, whisk in the palabok mix, and bring to a boil on a medium high heat. Once it starts to boil, turn the heat down to medium low.
- Take the egg and whisk it into the sauce.
- Toss the shrimp into the sauce and cook until the shrimp turns pink.
- Turn off the heat and take it off the burner.
- Serve the noodles on a plate, top with sauce, and garnish. Enjoy!
